Skordalia Tsatsiki Keftedes Fasolada and other Greek recipes

Bean soup (Fasolada)

A packet of beans, small or big, 
left over night in water
3 carrots
3 onions
1 celery
2 spoons olive oil
salt, pepper

Boil the beans in freah water for about an hour. Then add all the above ingredients and boil for another 30-40 minutes, until the beans are ready. Add the oil in the end.

Greek Cold Plates

Skordalia (Garlic salad)

1 loaf of white bread (preferably a few days old)
1 cup of olive oil
1/2 cup of vinegar
1 whole pressed garlic

1. Soak the bread in water, then strain it
2. Put the bread and the ingredients in mixer. Put the bread in slowly, otherwise the mixer will get stuck

Lemon Chicken
(for two)

1chicken breast cut in quite big pieces.
juice from 1 lemon
1 cup olive oil
1 glass of water
6-8 small cleaned potatoes
8 small onions

1.Heat the oil in a saucepan and fry the chicken for a few minutes.
2.Pour the water in, lower the temperature, and put the rest of the ingredients in the saucepan.
3. Put a lid on and let slowly boil/fry until all the water is gone (ca 20-30 min)

Keftedes (Meatballs)
(for two)

1/2 kg minced meat
3 pressed garlic cloves
some cinnamon, spearmint, oregano, basilika
1 cup crisp bread (as powder)
1 egg

1. Mix all the ingredients well
2. Leave for 20-30 minutes
3. Shape small meatballs and fry them.

Tsatsiki 

1/2kg Greek youghurt
1 grated cucumber
2 pressed cloves of garlic
1 spoon of vinegar
1 spoon olive oil

1. Mix all the ingredients
2. Put some oregano on if you want     

 

Moshari me Araka - Veal with Peas

1kg veal shoulder - boned
2-3 tblspns flour
2 finely chopped medium onions
2 grated medium carrots
1/2 cup white wine
1 bay leaf
4-5 ripe tomatoes (or 1 can)
2-3 sprigs of parsley
Bay leaf
500 gr cooked peas
salt & pepper

Mix the salt and pepper with the flour. Wash the meat, cut it into small pieces and dredge it in the flour. Heat the butter and brown the meat. Add the onions and the carrots and continue to saut�. Add the wine first and then the tomatoes, peeled and put through a food processor, the parsley, the bay leaf, the salt and pepper and a good amount of water. simmer the meat for about 1 1/2 hours.
